| dc.description | Throughout our history the presence of alcoholic beverages has had an impact from the oldest civilizations to the industrialization and generation of liquors with added value. The research will be carried out in the agroindustrial workshops and laboratories of the “La María” campus. The obtaining of the raw material that is the juice of cane to be fermented will be coming from the jurisdiction of the Canton Pangua (The Heart), while the tangerine and lemongrass leaves were obtained in the experimental farm. The study aims to determine the effect of maturity and variations of tangerine leaves mixed with lemongrass on the absorption of the spirit alcoholic beverage, being part of its characters evaluated by a sensory analysis. Its distillation will be carried out using a simple stainless steel column distiller and its absorption analysis was carried out using a spectrophotometer. As the data made were a completely randomized block design (DBCA), the best a2b0 treatment (0.16% of ripe tangerine leaves with Hierbaluisa) was determined highlighting favorable sensory characteristics and an absorbance of 0.91 a 354 nm establishing as a blue hue in the spirits drink. The composition of the liquor showed a concentration of 4.67 mg / 100 cm³ in methanol becoming a minimum irrigation product for the consumer. The results of the research generated positive results, obtaining 3 crystalline treatments and 6 of bluish hue fulfilling the objectives of the same. | dc.description.abstract | A lo largo de nuestra historia la presencia de bebidas alcohólicas han tenido un impacto desde las civilizaciones más antiguas hasta la industrialización y generación de licores con valor agregado. La investigación se realizará en los talleres agroindustriales y laboratorios del campus “La María”. La obtención de la materia prima que es el jugo de caña a ser fermentado será provenientes de la jurisdicción del Cantón Pangua (El Corazón), mientras las hojas de mandarina y hierba luisa fueron obtenidas en la finca experimental. El estudio tiene como objetivo determinar el efecto de la madurez y concentraciones de hojas de mandarina mezcladas con hierba luisa en la absorbancia de la bebida alcohólica espirituosa, siendo parte de sus caracteres evaluados mediante un análisis sensorial. Su destilación se realizará mediante un destilador de columna simple de acero inoxidable y su análisis de absorbancia fue realizado mediante un espectrofotómetro. A medida que se tabularon los datos realizando un diseño de bloques completamente al azar (DBCA), se logró determinar al mejor tratamiento a2b0 (0,16% de hojas de mandarina maduras con Hierbaluisa) destacando favorables características sensoriales y una absorbancia de 0,91 a 354 nm estableciendo como un matiz azul en la bebida espirituosas. La composición del licor demostró una concentración de 4,67 mg/100 cm³ en metanol convirtiéndose en un producto de riesgo mínimo para el consumidor. Los resultados de la investigación generó resultados positivos obteniendo 3 tratamientos cristalinos y 6 de matiza azulado cumpliendo los objetivos de la misma.
