| dc.description | This research project covers the study of the central zone of the province of Los Ríos in the cantons of Mocache, Quinsaloma, Palenque, Vinces and Ventanas with the purpose of creating a gastronomic guide with the most representative recipes of each canton. The general objective of the research project was to analyze the typical gastronomy, hollows and recipes of the cantons of the central zone of the province, where three objectives were established, the first is aimed at the diagnosis of the current situation of gastronomy, hollows and recipes of each canton, through surveys conducted to each of the owners of the hollows information was obtained on the typical gastronomy, in the second objective information was compiled for the technical data sheets of the recipes and hollows where general data of the recipes and each establishment from its beginnings to the present was acquired. Subsequently, in the last objective, a gastronomic guide of recipes and hollows of each of the mentioned cantons was elaborated with data such as the name of the hollow, owner, address, photo and description of the typical dish, brief history of the hollow and the typical recipes of each canton, with the purpose of informing the inhabitants of the place and visitors about the gastronomy of each place. | dc.description.abstract | El presente proyecto de investigación abarca el estudio de la zona centro de la provincia de Los Ríos de los cantones Mocache, Quinsaloma, Palenque, Vinces y Ventanas con la finalidad de realizar una guía gastronómica donde consten las huecas y recetas más representativas de cada cantón. El objetivo general del proyecto de investigación fue analizar la gastronomía típica, huecas y recetas de los cantones de la zona centro de la provincia, donde se estableció tres objetivos el primero está dirigido al diagnóstico de la situación actual de la gastronomía, huecas y recetas de cada cantón, mediante las encuestas que se realizaron a cada uno de los dueños de las huecas se obtuvo información sobre la gastronomía típica, en el segundo objetivo se compiló información para las fichas técnicas de las recetas y huecas donde se adquirió datos generales de las recetas y de cada establecimiento desde sus inicios hasta la actualidad. Posteriormente en el último objetivo se elaboró una guía gastronómica de recetas y huecas de cada uno de los cantones mencionados donde constan datos como el nombre de la hueca, dueño, dirección, foto y descripción del plato típico, breve historia de la hueca y las recetas típicas de cada cantón, con la finalidad de dar a conocer a los habitantes del lugar y visitantes la gastronomía de cada lugar.
