| dc.description | In the present investigation, the antioxidant activity of mucílage samples in the fermentation process of the Nacional x Trinitario complex cocoa and CCN-51 from the collection (45 Kg of each variety) of the “La Cruz” Farmers Association of the Mocache canton was determined Province of Los Ríos. With the objective of evaluating the functional properties of the two varieties of cocoa, the antioxidant activity was determined by ABTS + and FRAP applying UV-VIS spectrophotometry and by the ORAC method using fluorescence. The antioxidant activity of the cocoa mucílage samples measured by the ABTS + method was higher, compared to the FRAP and ORAC methods, with values of 8,54 µM TE• mL -1 in samples of the Nacional x Trinitario complex and 3,40 µM TE• mL -1 , in CCN-51. The antioxidant activity by the FRAP method presented values of 7,89 and 3,35 µM TE• mL -1 for the mucílage samples of the Nacional x Trinitario and CCN-51 complex, respectively. In the ORAC method, the lowest antioxidant activity was identified, presenting values of 1,33 and 1,28 µM TE• mL -1 in the mucílage samples of the Nacional x Trinitario and CCN-51 complex. Based on these results, it can be determined that this by-product of the cocoa profit chain can be used in the food and pharmaceutical industry as a source of antioxidants. | dc.description.abstract | En la presente investigación se determinó la actividad antioxidante de muestras de mucílago en proceso de fermentación de cacao complejo Nacional x Trinitario y CCN-51 provenientes de la colección (45 Kg de cada variedad) de la Asociación de Agricultores “La Cruz” del cantón Mocache, Provincia de Los Ríos. Con el objetivo de evaluar las propiedades funcionales de las dos variedades de cacao, se determinó la actividad antioxidante por ABTS + y FRAP aplicando espectrofotometría UV-VIS y por el método ORAC empleando fluorescencia. La actividad antioxidante de las muestras de mucílago de cacao medida por el método del ABTS + fue mayor, en comparación con los métodos de FRAP y ORAC, con valores de 8,54 µM TE• mL -1 en muestras de complejo Nacional x Trinitario y 3,40 µM TE• mL -1 , en CCN-51. La actividad antioxidante por el método de FRAP presentó valores de 7,89 y 3,35 µM TE• mL -1 para las muestras de mucílago de complejo Nacional x Trinitario y CCN-51, respectivamente. En el método de ORAC se identificó la menor actividad antioxidante presentando valores de 1,33 y 1,28 µM TE• mL -1 en las muestras de mucílago de complejo Nacional x Trinitario y CCN-51. En base a estos resultados se puede determinar que este subproducto de la cadena de beneficio del cacao puede ser empleado en la industria alimentaria y farmacéutica, como fuente de antioxidantes. Esto permitirá valorar residuos de este importante sector con un enfoque en una política cero residuos.
