Abstract
La presente investigación consiste en evaluar el efecto de inclusión de quitosano en dieta
peletizadas sobre la actividad enzimática digestiva y composición química en juveniles de
tilapia roja (Oreochormis sp.). Se realizó en el laboratorio de acuicultura en el Campus “La
María”, perteneciente a la FCP de la Universidad Técnica Estatal de Quevedo, en el
laboratorio de acuicultura, con una duración de 55 días para lo cual se emplearon 6
tratamientos con tres repeticiones en un DCA. Cada uno de estos tratamientos estructuro una
dieta experimental con diferente inclusión de quitosano al (0, 1, 2, 3, 4 y 5 %). Se realizó
una biometría cada 15 días, los análisis de la actividad enzimática de la proteasa, lipasa y
amilasa al igual que la bromatología del musculo, se realizaron a nivel de laboratorio. Donde
se determinó que la mayor actividad enzimática digestiva se expresó en los tratamientos T4
y T5 con inclusión de quitosano al 3 % y 4 %. Mientras el mayor valor de enzimas proteasas
se obtuvo en el T5 (4 % de quitosano en la dieta). En la actividad enzimática de la lipasa no
existió diferencia estadística, sin embargo, el mayor valor se presentó en el T4 (3 % de
quitosano en la dieta). Mientras que en la actividad enzimática de amilasas el mayor
promedio se obtuvo en el T2 (1 % de quitosano en dieta). En los análisis bromatológicos de
la composición del musculo de la tilapia, el mayor porcentaje de materia seca se registró en
el T4 (3 % de quitosano en la dieta), respecto a la energía el mayor lo obtuvo el T3 (2 % de
quitosano en la dieta). El mayor contenido de carbohidratos se obtuvo en el T2 (1% de quito
sanó en la dieta). El porcentaje de energía relaciono con los valores de grasa, debido a que
se obtuvo el mayor valor en el T3. Se concluye que la mayor actividad enzimática de proteasa
se obtuvo en los tratamientos T4 y T5 (3 y 4 % de quitosano en dieta), en las Lipasas se
obtuvo T4 (3 % de quitosano en dieta) y en la actividad enzimática de las proteasas se obtuvo
en el tratamiento T2 (1 % de quitosano en dieta). Con respecto a la bromatología del musculo
se obtuvo valores casi homogéneos.

This research is in and valuate the effect of inclusion of chitosan diet pelleted on digestive
enzyme activity and chemical composition in juvenile red tilapia ( Oreochromis sp . ) . It
was carried out in the aquaculture laboratory on the “La María” Campus, belonging to
the FCP of the Quevedo State Technical University, in the aquaculture laboratory, with a
duration of 55 days for which 6 treatments with three repetitions were used in a DCA . Each
of these treatments structured an experimental diet with different inclusion of chitosan
at ( 0 , 1 , 2 , 3 , 4 and 5 %) . A biometry was performed every 15 days, the analyzes of the
enzymatic activity of protease, lipase and amylase, as well as the muscle bromatology , were
carried out at the laboratory level. Where it was determined that the highest digestive
enzymatic activity was expressed in treatments T4 and T5 with inclusion of
3 % and 4 % chitosan . While the highest value of protease enzymes was obtained in T5 ( 4 %
chitosan in the diet) . There was no statistical difference in the enzymatic activity of
lipase, however, the highest value was presented in T4 ( 3 % chitosan in the diet) . While in
the amylase enzymatic activity the highest average was obtained in T2 ( 1 % chitosan in
diet) . In the bromatological analyzes of the tilapia muscle composition, the
highest percentage of dry matter was recorded in T4 ( 3 % chitosan in the diet), with respect
to energy the highest was obtained by T3 ( 2 % chitosan in diet) . The highest carbohydrate
content was obtained in T2 ( 1% of quito healed in the diet) . The percentage of energy was
related to the fat values, because the highest value was obtained in T3 . It is concluded
that the highest protease enzymatic activity was obtained in treatments T4 and T5 (3 and 4%
chitosan in diet), in Lipases T4 (3% chitosan in diet) and in the enzymatic activity of
proteases it was obtained in the T2 treatment (1% chitosan in diet). With respect to the
bromatology of the muscle, almost homogeneous values were obtained.
