Abstract
Theobroma cacao L., se considera un árbol nativo del trópico americano, sus hojas son simples alargadas, enteras y de color verde. Sus colores van desde el café claro, morado al rojizo y verde pálido. Los compuestos bioactivos normalmente están en cantidades muy pequeñas en los alimentos que consumimos como parte de nuestra dieta regular y en casi todos los casos provienen de fuentes de alimentos vegetales. El presente trabajo investigativo tuvo como objetivo estudiar los compuestos bioactivos de las hojas de tres variedades de cacao en dos estados foliares, analizando sus propiedades físicas y químicas así como el contenido de carotenoides y polifenoles. Para esto se utilizó un DCA con arreglo factorial AxB, donde el factor A fueron las variedades de cacao: Nacional Forastero y Trinitario, y el factor B fue los estados foliares: Joven y Adulto. Los análisis realizados fueron el contenido de humedad, cenizas totales y grasas; también el contenido de carotenoides y polifenoles. Los resultados indicaron que en las variables de humedad, cenizas totales y grasa existieron diferencias significativas a nivel de factores al igual que en la interacción AxB. El T5 fue el que obtuvo los valores más altos de humedad con 82.36%; y cenizas totales con 1.40%; mientras que el T2 presento 5.59% de grasa. Finalmente se pudo conocer el contenido de carotenoides en estado adulto de las hojas de cacao y el contenido de polifenoles. Theobroma cacao L., is considered a native tree of the American tropics, its leaves are simple elongated, whole and green in color. Its colors range from light brown, purple to reddish, and pale green. Bioactive compounds are normally in very small amounts in the foods we consume as part of our regular diet and in almost all cases they come from plant food sources. The objective of this research work was to study the bioactive compounds in the leaves of three varieties of cocoa in two leaf states, analyzing their physical and chemical properties, as well as the content of carotenoids and polyphenols. For this, a DCA with AxB factorial arrangement was used, where factor A was the cocoa varieties: Nacional Forastero and Trinitario, and factor B was the foliar states: Joven and Adulto. The analyzes carried out were the content of humidity, ash and total fat; Also the content of carotenoids and polyphenols. The results indicated that in the humidity, ash and total fat variables there were significant differences at factor level, as well as in the AxB interaction. T5 was the one that obtained the highest humidity values with 82.36%; and total ashes with 1.40%; while T2 had 5.59% fat. Finally, it was possible to know the content of carotenoids in the adult state of cocoa leaves and the content of polyphenols.
