Abstract
La naranja (Citrus sinensis), es el cítrico de mayor consumo en el Ecuador; sin
embargo, no todas sus partes son aprovechadas, siendo desechadas como residuo. Entre
estas partes está el flavedo que contiene gran cantidad de propiedades beneficiosas; que
podrían emplearse en subproductos como infusión cuyo mercado en el país es poco
conocido, representando una alternativa para el consumidor de bebidas calientes,
naturales y saludables. Por este motivo, en el presente trabajo de investigación se
determinó la formulación adecuada de flavedo y Stevia, y el contenido en gramos para
la obtención de una infusión cítrica. Se empleó un diseño completamente al azar (DCA)
con arreglo factorial de 3x3 con 4 repeticiones. El factor A fue la relación flavedo:
Stevia, mientras que el factor B, el contenido en gramos de la infusión. Los parámetros
físico-químicos evaluados fueron: humedad (%), pH, grados Brix (%), acidez y cenizas
totales (%). La valoración sensorial fueron atributos de color, aroma, sabor y
aceptabilidad, además del análisis de preferencia donde se determinó que el mejor
tratamiento fue el T5 (95% flavedo, 5% Stevia en 2 gramos) presentando valores de
11.23% de humedad, 5.18 pH, 2.33% grados Brix, 0.00045% acidez y 3.48% cenizas
totales. En el análisis microbiológico de Aerobios, Mohos y Levaduras los valores
estaban dentro de los parámetros establecidos en la NTE INEN 2392. En el análisis
económico se determinó el costo de elaboración de la infusión arrojando como resultado
un costo unitario de $2.76 y un P.V.P. de $3.03 con un 10% de utilidad.

The orange (Citrus sinensis), is the citrus with the highest consumption in Ecuador;
However, not all its parts are used, being discarded as waste. Among these parts is the
flavedo, which contains a large number of beneficial properties; It could be used in byproducts
such
as
infusion
whose
market
in
the
country
is
little
known,
representing
an
alternative
for the consumer of hot, natural and healthy beverages. For this reason, in
the present research work the suitable formulation of flavedo and Stevia, and the content
in grams to obtain a citrus infusion, were determined. A completely randomized design
(DCA) was used with a 3x3 factorial arrangement with 4 repetitions. Factor A was the
flavedo: Stevia ratio, while factor B, the gram content of the infusion. The physicalchemical

degrees

acidity
and
total
ash (%). The sensory evaluation were attributes of color, aroma, flavor and
acceptability, in addition to the preference analysis where it was determined that the
best treatment was T5 (95% flavedo, 5% Stevia in 2 grams) presenting values of
11.23% humidity, PH 5.18, Brix degrees 2.33%, acidity 0.00045% and total ash 3.48%.
In the microbiological analysis of Aerobes, Molds and Yeasts, the values were within
the parameters established in the NTE INEN 2392. In the economic analysis the cost of
making the infusion was determined, resulting in a unit cost of $ 2.76 and a P.V.P. of $
3.03 with a profit of 10%.
