Abstract
El presente trabajo investigativo: “EVALUACION DEL PROCESO DE OBTENCION DE NECTAR A PARTIR DE JACKFRUIT (Artocarpus heterophyllus) EN EL CANTON QUEVEDO, PROVINCIA DE LOS RIOS” se realizó considerando la necesidad del sector agroindustrial permitiendo nuevas alternativas de desarrollo y a la vez de industrialización.
El Artocarpus Heterophyllus es conocido comúnmente como: la Jaca, siendo originario de las regiones tropicales de Sudámerica fue uno de los primeros árboles frutales americanos introducidos al viejo mundo.
En el Ecuador el cultivo de jackfruit es una opción interesante para la diversificación Agrícola, y para la elaboración de procesos Agroindustriales. Ya que la abundante biodiversidad provee a la humanidad de cultivos nuevos, en una amplia variedad de productos industriales y medicinales.
Por lo general el procedimiento de la cosecha constituye un problema, por sus frutos inmaduros o aquellos pasados de madurez (inclusive con ataque de insectos) proveniente de la mezcla de variedades, no habiendo una buena selección del fruto.
La investigación basada fue para identificar problemas de manejo de cosecha, industrialización, comercialización y posteriormente aprovechamiento.
Se justifica el proceso y culminación de la investigación ya que, se busca mejoras de este producto con las exigencias de un nuevo mercado consumidor.
La variables a evaluarse fueron:
• pH
• Acidez
• Grados Brix
• Análisis microbiológico
• Pulpa suspendida
• Humedad
Para evaluar la elaboración del néctar de Jackfruit se realizó 24 tratamientos, los mismo que resultaron de combinar los tres factores de estudio con sus respectivos niveles, en un arreglo factorial de AxBxC.

This research work: "EVALUATION PROCESS FOR OBTAINING FROM NECTAR JACKFRUIT (Artocarpus heterophyllus) IN THE CANTON QUEVEDO, LOS RIOS PROVINCE" was made considering the necessity of allowing agribusiness development alternatives while industrialization.
The Artocarpus heterophyllus is commonly referred as the Jaca, being native to the tropical regions of South America was one of the first American fruit trees introduced to the Old World.
In Ecuador, jackfruit cultivation is an interesting option for agricultural diversification and the development of agro-industrial processes. Since the rich biodiversity provides to humanity of new crops in a wide variety of industrial and medical products.
Usually the harvesting procedure is a problem, immature fruit maturity or those past (even with insect attack) from the mixture of varieties, not having a good selection of fruit.
Based research was to identify problems crop management, manufacturing, marketing and later use.
Process is warranted and completion of the investigation and that is looking for improvements of this product with the requirements of a new consumer market.

• Humidity
To evaluate the production of nectar was performed 24 trataminetos Jackfruit, the same that resulted from three factors combine study with their respective levels in a factorial arrangement of AxBxC.
