Abstract
Considerando la necesidad de contar con un proceso industrializado, que permita diversificar la aplicación de la almendra de cacao, este estudio pretende la obtención de tinte de cabello a base de esta baya, el mismo permite analizar variables implícitas en mantener las propiedades del cacao en el tinte, considerando que los métodos por solventes o mediante altas temperaturas podrían alterar la calidad del producto. Este estudio consistió en evaluar dos métodos de secados con temperaturas bajas y estandarizadas para no alterar las propiedades del cacao, dos variedades de cacao: Nacional, CCN51 y dos colorantes naturales: hoja de salvia, café. La extracción de tinte se inició con la recepción de la almendra, esta fue sometida a secado: solar y en estufa eléctrica con una temperatura 60°c, seguido por el tostado del cacao y el descascarilla, luego se procedió a la molienda del grano y separación de fases para extraer la grasa, se realizó análisis del pH y acidez de las muestras a nivel de laboratorio. Para la evaluación del proceso de obtención de tinte se aplicó un modelo estadístico de bloques completamente al azar con arreglo factorial AxBxC con dos repeticiones, se valoraron: pH y acidez, en esta investigación se comprobó que se puede utilizar cualquier de las variedades y el método de deshidratación con el café como colorante natural, fueron los que mejor pH obtuvieron, lo que permite concluir que la investigación logro deducciones positivas, los resultados obtenidos en este estudio podría servir como punto de partida en posteriores investigaciones.

Considering the need to have an industrialized process, which allows the diversification of cocoa almond application, this study aims at obtaining hair dye based on this berry, which allows analyzing variables implicit in maintaining the properties of cocoa in The dye, considering that the methods by solvents or by high temperatures could alter the quality of the product. This study consisted in evaluating two methods of drying with low temperatures and standardized to avoid altering the properties of cocoa, two varieties of cocoa: National and CCN51 and two additional additives: sage leaf and coffee. The dye extraction was started by obtaining the almond, which was dried: solar and in an electric stove with a temperature of 60 ° C, followed by roasting of the cocoa and peeling, then the grain was grinded and Separation of phases to extract the fat, analysis of the pH and acidity of each one of the samples at laboratory level was carried out. For the evaluation of the dyeing process, a completely randomized block statistical model with AxBxC factorial arrangement was applied with two replicates. The pH and acidity of the product were evaluated in this research. It was verified that any of the varieties can be used That did not report the method of dehydration and coffee as the natural dye were the best pH obtained, which allows to conclude that the research achieved positive deductions, the results obtained in this study could serve as a starting point in further research.
