Abstract
La presente investigación se realizó en la planta de cárnicos ubicada en la Finca Experimental “La María”, Universidad Técnica Estatal de Quevedo (UTEQ), tuvo como objetivo evaluar el despiece y composición tisular del cerdo Criollo negro alimentados con niveles de torta de palmiste (Elais guinensis J), al 0% (T1), 5% (T2) y 10% (T3). Se aplicó un Diseño de Bloques Completamente al Azar (DBCA). Se sacrificaron doce canales de cerdo Criollo de 50,58 kg de peso promedio. A los 45 minutos y 24 horas post-morten se registra el peso de la canal. En las hemicanales del cerdo se mide: la longitud de la canal sin cabeza, espalda, pierna, jamón, brazo, perímetro del jamón y de la mano, no existieron diferencias (P>0.05), pero numéricamente registro mayores valores el tratamiento tres (10% palmiste) 68,85cm, 55,78cm, 43,90cm, 34,74cm, 42,53cm, 42,70cm, 41,25cm respectivamente y menores valores con el tratamiento uno (0% palmiste) 68,41cm, 55,18 cm, 43,13cm, 34,03cm, 41,68cm, 42,30cm, 40.78cm correspondientemente. Con respecto a la composición tisular de los cortes primarios; para el tejido muscular: en el brazo se obtuvieron mayor porcentaje con el T1 (50.51%) y menor T3 (49,08%), pierna T1 (49,14%) y (T3 47,91%), chuletero T1 (46.06%) y T3 (45,49 %) y el costillar T1 (41,25) y T3 con (38,78 %). Para el tejido graso: en el brazo presento mayores valores con el T3 (33,98%), y menor con el T1 (33,54%), pierna T3 (34,78 %) y T1 (33,92), chuletero T3 (34,78 %) y T1 (33,64%) y el costillar con T3 (25,84 %) y T1 (23,17%). En relación al hueso: en el brazo presento mayor valor el T3 (13,87%) y menor T1 (12,79%), pierna T3 (14,21 %) y T1 (13,93%), en el chuletero registro mayor valor el T1 (17,64%) y menor el T3 (16,86 %) y costillar T1(33,23%) y T3 (33,05 %). En proporción al cuero: en el brazo presento mayores valores con el T1 (3,17%) y menor con el T3 (3,16 %), pierna T3 (3,11 %) y (T1 3,01%), en el chuletero presento mayor valor el T3 (2,86 %) y menor el T1 (2,66%) y el costillar T3 (2,33 %) y el T1 (2,31%). En cambio, para el B/C el mejor tratamiento fue 5% y 10% de torta de palmiste con 2,24 y 2,23 USD correspondientemente en los cortes primarios de la canal de cerdo Criollo.
Description
The present research was carried out in the meat factory located in the "La María" Experimental Farm, Quevedo State Technical University (UTEQ). The objective was to evaluate the cutting and tissue composition of black Criollo pig fed with levels of palm kernel cake (Elais guinensis J), 0% (T1), 5% (T2) and 10% (T3). A completely randomized block design (DBCA) was applied. Twelve carcasses of Criollo pig weighing 50.58 kg of average weight were sacrificed. The weight of the canal is recorded at 45 minutes and 24 hours postmortem. In contrast, for B / C the best treatment was 5% and 10% of palm kernel cake with 2.24 and 2.23 USD correspondingly in the primary sections of the Criollo pig canal.
